New to Altair, Stephen Ollington first purchased 52 Wagyu in November 2019.

The costal farm receives an average rainfall of 1100mm, perfect for growing grass pasture to finish cattle on

Wagyu’s temperament is quiet and we can move the cattle from paddock to paddock easily. The cattle enjoy ample grass and silage, which results in fine marbling throughout the meat and a unique eating experience.

Les Porteus

Altair Wagyu Farmer

Les Porteus has been supplying Angus cattle to Greenham for over 20 years, with the farm being in the family for three generations.

Recently, Les Porteus has introduced Wagyu cattle to his farm and is finishing Wagyu on grass for Altair Grass-fed Wagyu.

“The cattle I finish and have been finishing for over 20 years are all grass-fed. Wagyu cattle are commonly grain-fed, so it was exciting to see Greenham bring a Grassfed Wagyu option to the market. To get a good product and consistent marbling in grassfed Wagyu it’s important to maintain good pasture to regularly rotate the Wagyu cattle on. The biggest benefit of finishing Wagyu on grass is the flavour. It creates richer, more flavoursome meat. Beef always tastes better off grass, so I’m proud to be a part of Altair Grassfed Wagyu.”
